How long have you been in business?
In the late sixties, Bill and Karen Dunlap taught school in Wrangell, Alaska. They loved the people, beautiful scenery and rugged lifestyle. Neither knew the native salmon would change their lives. A fellow teacher asked Bill to join him fishing one summer. It seemed like an interesting idea… time was available and a new adventure was always welcome.
Soon Bill was “hooked.” In 1973 he and Karen purchased the “Karen H”. Fishing prospered. They bought the Restless. In 1981, they smoked 200 pounds of salmon and gave them to family and friends who wanted more. The next year they smoked 2,000 pounds. Karen sold all the salmon in four days! It was natural… catch ‘em, smoke ‘em and sell ‘em.
The company was sold to Jack Praino in early 1997. Jack “discovered” Alaska Smokehouse in 1990 when he purchased his first smoked salmon at one of Alaska Smokehouse retail locations. Little did Jack know that his love for Smoked Salmon in those beautiful cedar boxes would turn into such an adventure several years later. After meeting Karen in 1996 one thing led to another and Jack purchased the company in early 1997.
In 2002 we acquired The Famous Pacific Dessert Company and Sleepless in Seattle Coffee. Like Alaska Smokehouse, The Famous Pacific Dessert Company had a twenty-year history of delivering quality products to consumers throughout the country. The combined company provides consumers and our wholesale partners with over 100 different products to select from.
After the company expierenced outstanding growth from 2002 through 2007, we looked to expand our product line into other areas of gourmet food. This is when we set our eyes upon gourmet soups and what would become Smokehouse Soups and Spices. After much collaboration with the Food Innovations Laboratory in Portland, Oregon, we had settled on our nine gourmet dry soup mixes and two county-style breads. The Food Innovations Laboratory is a joint effort between Oregon State University and the Oregon Department of Agriculture to foster the success of Northwestern culinary enterprises.
We soon set our sights upon another area of gourmet cooking, and that was to capture the experience and taste of gourmet salts. Named after Jack’s eldest daughter, Leila, “Leila Bay Trading Company” was formed to bring the benefits of gourmet sea salts back into popularity.
This is only the begining of our history and the rest is being written on the plates of the specialty food trade.

Alaska Smokehouse
The Alaska Smokehouse product line offers Alaskan, naturally-wild, Pacific Northwest style Smoked Salmon, a full line of Salmon and Ahi Stix, Salmon Jerky and Spreads. The Salmon we use are all selected for their rich color, size and texture. The Salmon are hand-filleted and marinated in a special brine and then slowly smoked over alderwood for 6 to 18 hours. This produces a salmon that is fully cooked with a firm texture that easily flakes apart when serving. The Salmon products are then placed in a retort, which is a gold foil bag, vacuum sealed and then placed in a pressure cooker and “flash canned” so quickly that none of the delicious flavor or moist texture is lost. The Smoked Salmon needs no refrigeration, has a five-year shelf life, and can be shipped anywhere!
The Famous Pacific Dessert Company
The Famous Pacific Dessert Company has received rave reviews in print and media. Award Winning gourmet hot cocoa, a high quality line of shelf stable tea cookies, rich fruit purees and baking mixes, present the finest dessert product line available anywhere. These delicious desserts are the result of a long testing process that ensures the recipes used produce only the highest quality gourmet treats that will be sure to please even the most discerning of palates.
Sleepless in Seattle Coffee
What better way to say Romance than with Sleepless in Seattle Coffee. Inspired by the movie “Sleepless in Seattle”, this special coffee is the perfect way to say “I love you” to that someone special. Our roasting process coaxes a wonderful rich flavor from the coffee bean. As in making wine, where you rely on the Vintner to create that special flavor, we rely on the Master Roaster to create our wonderful Sleepless in Seattle Coffee.
Smokehouse Soups & Spices
The aroma and flavor, reminiscent of a simmering cast iron kettle over the open hearth, are the memories we hear about when someone first smells and tastes our Smokehouse Soups & Spices line of nine gourmet soups and two country-style breads. Smokehouse Soups & Spices returns to the roots of gourmet cooking with no additives, preservatives or MSG, and only the purest ingredients and spices are contained in each product, providing a truly satisfying cooking and eating experience. The soups were developed with the input of the Food Innovations Laboratory of Portland, Oregon over the course of six months The end result of their careful collaboration is a line of soups with a perfect blend of natural ingredients to capture the taste of homemade.
Leila Bay Trading Company
The gourmet chef’s search to add more flavor to meals has brought the return of gourmet salts. World Wide Gourmet Foods, Inc. is pleased to introduce a line of twelve gourmet salts marketed under the Leila Bay Trading Company brand. Sea salts have gained gourmet status as they have joined other seasonings as home chefs have learned the benefits of using these unique salts. Gourmet salts, including unrefined sea salts and mineral-rich rock salts, are gaining exponential popularity because of the better taste and texture than with typical table salt.
How did you first become interested in your line of business? (if owner) - What is your background? (If owner or store manager)
Jack Praino purchased Alaska Smokehouse® in 1997 from founders Bill and Karen Dunlap and created World Wide Gourmet Foods™, Inc.; however, before the purchase his resume looked more like most others trying to climb up the corporate ladder. Graduating from Eastern Washington University in 1983 with a BA in Operations Management and a MBA from City University, Mr. Praino worked for six years in the Marketing Department of the Olympic Stain Division of Clorox Co., before moving to Digital Systems International, Inc. in Redmond in 1990. There he was a Marketing Manager before being promoted to Vice President of North American Distribution in 1995.
Mr. Praino also currently serves as the Vice President of the Autism Spectrum Treatment and Research (ASTAR) organization, a non-profit dedicated to supporting children and families impacted by Autism.
